What is a stock ledger (kardex) and why does it matter for an SME?

The stock ledger, known in Costa Rica as the kardex, records every entry and exit of a product along with its cost. It tells you the real cost of what you sold and the value of what's in the warehouse. Kept by hand or in spreadsheets it quickly goes out of date; in an inventory system it updates itself with every movement.

How do you control inventory in a restaurant?

With recipes. Each dish is defined with its ingredients and quantities, so every sale deducts ingredients and not just the dish. Adding recorded purchases and waste, the system calculates the cost per dish and tells you which ingredients to buy before the kitchen runs out.
